Stewed Beans
Stewed beans are delicious alone but better when they’re accompanied by a side of white rice. Stewed beans can be made with kidney beans, pinto or any other kind of red beans. Stewed beans are a staple in Puerto Rican cuisine.

Ingredients
• 1 can of Goya Small Red Beans
• 1 small peeled potato (cut in ½ inch pieces)
• 1/4 - 1/3 of a cup of sofrito enough to cover the bottom of a medium pot
• 1 packet of Goya Sazon
• ½ can of Goya Tomato Sauce
• Olives to taste ( I used about 6)
• 2 tablespoons of roasted red peppers (optional)
• Oil (about 1-1 ½ tablespoons, enough to lightly coat bottom of medium sauce pan)
• 1 or 2 bay leaves
• Salt and garlic powder to taste
• ½ cup of water

• Cover the bottom of a medium sauce pan with oil (about 1 to 1 1/2 tablespoons)

• Add sofrito, Goya Sazon, Goya Tomato Sauce, olives, roasted red peppers, potatoes , ungrained beans and stir

• Stir in water
• Add 1 to 2 bay leaves
• Add salt and garlic powder to taste
• Once it has come to a boil, set heat to low put lid on pot and let it simmer stirring occasionally
• Beans are done when potatoes are fork tender about 20 to 30 minutes

Serve with white rice and enjoy!
