
Puerto Rican Family Favorite
How to create my family's favorite go to meal
Sofrito
Sofrito is the base of most Puerto Rican dishes. It usually consists of a combination of peppers, onions, garlic and cilantro. Everyone has their own version; I will share with you mine. Enjoy!

Ingredients
• 4 green pepper
• 1 yellow pepper
• 1 red pepper
• 1 orange pepper(I usually prefer to use only red and green peppers)
• 2 bunches of cilantro
• 3 onions
• 1 head of garlic
• Vegetable oil
• Salt
• Garlic powder

• Rinse all peppers
•Roughly chop all peppers and place in a bowl
• Roughly peel and chop onions and place in bowl
• Peel all the garlic and give it a rough chop then add to the bowl holding the onions
• Cut the end stems of the cilantro and give it a rough chop rinse and place in a bowl


• In a blender or food processor add some of the onion/garlic mixture, peppers, cilantro and a drizzle of oil and use the chop and pulse settings to process ingredient together; transfer mixture to a different bowl


• Stir the mixture in the bowl and add salt and garlic powder to taste (I added about 1 tablespoon of salt and 1 ½ teaspoons of garlic powder)

• Place sofrito in freezer safe containers and freeze until ready to use. Fresh sofrito can be kept unthawed in the refrigerator 3 to 4 weeks.
