Sofrito Marinated Chicken Thighs

Here is another great way to use sofrito. Here we're using sofrito with always affordable and readily available chicken thighs. You can also use sofrito to season other cuts of chicken, steak or pork. It’s very versatile. Enjoy!
Ingredients
• 4 pieces of boneless skinless chicken thighs
• 1 cup of sofrito
• ¼ of white distilled vinegar
• 1 packet of Goya Sazon
• Goya Adobo seasoning

• Place chicken thighs in a large bowl
• Evenly coat chicken on both sides with packet of Goya Sazon and Goya Adobo seasoning
• Add 1 cup of sofrito and ¼ of vinegar and stir so that the chicken is evenly covered with the marinade
• Set aside for 15 to 20 minutes or refrigerate for a few hours or even over night

• Add about a tablespoon or so of oil to the pan and set heat to med

• Add chicken thighs and all of the marinade to the pan and cook for 10 minutes on each side and till sauce has thickened
• Flip the chicken and cook for about another 10 minutes
• Keep cooking until the sauce has thickened

Serve with white rice and stewed beans and enjoy!
